In the years since the first conferences on winery wastes treatment and management, the topic has been growing in importance internationally. Furthermore, legislation has evolved significantly in recent years, developing a more advanced standard for environmental management. With this background, the scope of the 3rd conference was broadened to include all aspects relating to sustainable viticulture, encompassing the whole life cycle of wine and all its environmental interactions. Hence this well attended conference addressed in addition to the classical aspects of winery effluents treatment and disposal, the related field of vinasses and wine-alcohol, and cleaner production, also examined the issues linked to an optimal sustainable environmental management. From the high-quality programme 25 papers have been selected following stringent peer review for these proceedings. These papers constitute an essential and up-to-date reference source for researchers, waste managers, industrial producers, consultants and environmental engineers with an interest in this most ancient of agro-industries.
