If I were to give proof of theories and reasons why I hold views as it is laid down in this book, I would be obliged to fill a much larger volume of arguments of no real value to the reader, I simply ask those who wish truth of correctness to try the theories with practice, and they will be convinced of the advantage over customary methods which are in use in the confectionery business, further reference to the reliability of the notes before us is really not necessary.
