It is thus not difficult to see in what direction the taste of the educated or informed part of the people will in the future be developed. The days of the heavily-brandied wines are numbered, since it is proved that the wines of Xeres and Oporto can be brought into a merchantable condition with out extraneous spirit. As the habits of the people get softened, so they decrease both the quantity and strength of the alcoholic liquids which they consume, and insist upon increasing quality and differentiation of their beverages.
